The smooth machined interior really does make a difference—my dough slides out effortlessly and the crust comes out with that perfect crackle. Seven quarts feels huge but it's not unwieldy, and the pre-seasoning held up great through the first wash.
Baked two loaves of sourdough in this last weekend and the 7 quart size handled both with room to spare. The pre-seasoned surface gave me a perfect crust right out of the gate, no extra oil needed.
