I’ve now used the No.8 for searing steaks and the No.4 for a single fried egg, and the smooth, pre-seasoned cast iron performs beautifully every time. Even the largest No.12 is manageable to lift with both hands when roasting a bird, and they all clean up with just a quick wipe.
The smooth cook surface on these skillets is a huge upgrade from the rough ones I've used before, and having five sizes means I finally reach for the right pan instead of struggling with a giant one. Frying an egg in the No.4 is ridiculously easy to flip without sticking.
